This time, the task resembled a mathematical system of equations: balancing, on the palate, the accounts between the impetuous power of the mandarino cv Tardivo di Ciaculli, capable on its own of overwhelming, overpowering, and challenging even the most experienced palates; the sweet, sinuous, enchantingly seductive notes of bacche di vaniglia Tahitensis; and the strength of the aroma of mandorla cv Romana, with its delightfully bitter note. We managed to solve this mathematical system with the help of the scale: carefully dosing each ingredient so that each could express itself as a soloist, while at the same time contributing to the harmony of a stunning trio.
